Local Rockfish & Preserved Meyer Lemon Salsa

Bright, Briny, & Balanced

Some flavors take time to develop—this one took six weeks. We started with Meyer lemons from my own backyard, known for their natural sweetness and floral aroma. Salted and preserved over time, they transformed into something deeper, richer, and more complex. Paired with our citrus spice blend—a bold mix of sumac, fennel, and paprika—this dish brings out the best in fresh rockfish, caught by Sam Stebnicki. The preserved Meyer lemon and olive salsa adds bursts of briny depth, balanced by roasted cherry tomatoes and capers for a savory, citrusy finish. Bright, salty, buttery, and layered with umami—this is the Lost Coast in every bite.

Pair it with a Daydream Believer Pale Ale for a crisp citrus complement or a Thyme in Flight cocktail for a herbaceous contrast. Fresh flavors, locally sourced, and deeply rooted in place—come experience it while it lasts.
